Gluten free goodies!

I modified this recipe from www.runnerskitchen.com. If you have not visited this site I highly recommend it. She posts great recipes and fun stories!

Coconut-Chocolate-Banana Bread Bites
Ingredients:
2 ripe bananas, mashed
1 Tb canola oil
2 Tb vanilla yogurt
3 Tbs maple syrup
1/2 tsp vanilla extract
1 cup oats
2/3 cup white rice flour
1/2 cup unsweetened coconut
1/4 tsp baking soda
1/4 tsp sea salt
1/3 cup chocolate chips
Directions:
Preheat oven to 350 F degrees
Combine the banana, oil, maple syrup, and vanilla in a large bowl
In a medium bowl, combine all dry ingredients except chocolate chips
Add the dry ingredients to the wet ingredients in 2-3 increments, stirring just until combined (don’t over mix!)
Stir in the chocolate chips
Drop heaping teaspoons of batter onto a parchment lined cookie sheet and bake for about 13-15 minutes, until lightly browned
Makes about 20 cookies
